Nothing like making homemade turkey soup the day after Thanksgiving. It's a tradition in our home and it's just so easy!
My recipe changes every year depending on what extra veggies we have in the refrigerator.
I put all of the turkey bones, one or two whole celery stalks, one onion cut into big chunks, a bay leaf and salt and pepper in a huge stock pot. I fill it with water about 2 inches above the food and let it boil for about an hour or so.
I strain the soup, but keep the meat. I add a bag of frozen mixed vegetables. I like the kind with corn, peas and carrots. I add a box of Ditalini, Orzo or any small shaped pasta and cook it until it's al dente.
Voila! You're done:) It freezes beautifully and tastes great with a sprinkle of Parmesan cheese.
