Tomato Pie from the kitchen of Tensil Clayton

Ingredients:

  • 4 tomatoes, peeled and sliced-I drain them in a colander for 15 min., sprinkle with salt and pepper. 
  • A few fresh basil leaves
  • chopped 1/2 cup chopped onion 
  • 1 (9-inch) deep dish pie shell 
  • ¼ cup mayonnaise mixed with 1/2cup grated mozzarella and 1/2 cup grated cheddar (or just cheddar cheese) 
  • Salt and pepper 
Directions
  1. Preheat oven to 350 degrees F. 
  2. Bake the pie shell for 10 minutes before making pie. 
  3. Put onions as first layer, then tomato slices, salt and pepper and a few basil leaves. 
  4. Add second layer of tomatoes. 
  5. Spread cheese mixture on top of the tomatoes and bake for 30 minutes or until lightly browned. 

I love this tomato pie and serve it at lunch or dinner in the summer. It is also good cold the next day.
