Tomato Pie from the kitchen of Tensil Clayton
Ingredients:
- 4 tomatoes, peeled and sliced-I drain them in a colander for 15 min., sprinkle with salt and pepper.
- A few fresh basil leaves
- chopped 1/2 cup chopped onion
- 1 (9-inch) deep dish pie shell
- ¼ cup mayonnaise mixed with 1/2cup grated mozzarella and 1/2 cup grated cheddar (or just cheddar cheese)
- Salt and pepper
Directions
- Preheat oven to 350 degrees F.
- Bake the pie shell for 10 minutes before making pie.
- Put onions as first layer, then tomato slices, salt and pepper and a few basil leaves.
- Add second layer of tomatoes.
- Spread cheese mixture on top of the tomatoes and bake for 30 minutes or until lightly browned.
I love this tomato pie and serve it at lunch or dinner in the summer. It is also good cold the next day.
