I make a great summer salad out of leftover veggies. I put cold cooked veggies over a bed of romaine lettuce, add some diced leftover chicken, add a few dried cranberries for additional color and flavor, and add your favorite salad dressing. Delicious meal which does not require heating up the house on an already hot summer day! Patricia
I make oven fried chicken. If there is any leftover chicken I cut it off the bone and make chicken salad pita with baba ghanoush where you top pitas with hummus or eggplant spread, lettuce, cucumber, tomato and mint-marinated grilled chicken for an inspired, easy take on the grilled chicken salad. And when it’s just too darn hot to cook and you decide to get takeout instead…you can use the leftover Chinese food in scrambled eggs. Just chop up the meat and use it in your morning eggs or wrap it into an egg burrito for a really delicious twist on breakfast. And combine any leftover fried rice with some grilled veggies for a delicious lunch or side dish to dinner the next night. That’s my little trick.
